89.7FM WUWM - Milwaukee Public Radio; they will be airing an interview with me this Friday. I am also taking a batch to the morning team of Today's TMJ4 - the local NBC affiliate. I won a $50 gift card to Sendik's and have to go to the station to pick up the prize – seemed like a great opportunity to share my cupcake love with my favorite morning team that helps me get up for work every single day.
I wanted to do something special for the holidays as a topper for these rich little cuppies....and then I remembered Iron Chef Michael Symon! A few weeks ago, you may remember that I was lucky enough to meet him. In the swag bag was a packet of recipe cards - including his Chocolate Covered Bacon. So I came home and fried me up a whole bunch of bacon...mmmm, bacon.
Then I dipped the pieces of bacon in a milk chocolate, sweet ancho chili and cayenne pepper mixture. (Yeah, I added the chili pepper - I just couldn't leave well enough alone.)
To finish it off I dipped the pieces of bacon in chopped pecans. His recipe called for almonds, but I had pecans on hand.
The result? Sweet, Spicy, Rich and Decadent.
