RECIPE: Dark Chocolate Blueberry Rooibos Cupcakes


Chocolate Blueberry Rooibos Cupcakes
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 cups white sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
2 eggs
1/2 cup cold, strong, Blueberry Rooibos tea (Rishi)
1 cup buttermilk
1/2 cup vegetable oil
2 cups fresh blueberries, divided
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, stir together the flour, 3/4 cup cocoa powder, sugar, baking soda, baking powder and salt. Make a well in the center and pour in the eggs, coffee, buttermilk and oil. Stir just until blended. Mix in 3/4 of the berries, reserving the rest for garnish. Spoon the batter into the prepared cups, dividing evenly.
  3. Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, frost and arrange the cupcakes on a serving platter.
Blueberry Rooibos Cream Cheese Buttercream
1 stick of sweet cream butter, room temperature
1 brick cream cheese, room temperature
1 splash vanilla extract
1 splash cold, strong, Blueberry Rooibos tea (Rishi)
1/8 cup whipping cream
4-6 cups powdered sugar
fresh blueberries for garnish
food color optional (2 drops red, 2 drops blue)
  1. Beat butter and cream cheese until light and fluffy.
  2. Add vanilla, tea and cream. If adding color, do so at this time. Whip until fluffy.
  3. Begin adding powdered sugar until desired consistency is reached.
  4. Chill for 1/2 hour. Pipe as desired.

Pet-Peeve, Remedied!!!!

I have a MAJOR pet-peeve. It has been bothering ever since I began cupcaking. I am constantly on the hunt for great patterned cupcake liners. And then...I find them, bake up a delicious batch of goodies and what do I end up with? Stained liners — because of oil and butter and other various cupcake pollutants.

Something amazing crossed my desk last week. An answer to my cupcake prayers. A liner that is adorable, but opaque! Doesn't stain when baked in. I KNOW you are wondering what they are, because I know I was. The answer...Baked For You StayBrite Baking Cups, made by Reynolds. They are a single, heavyweight liner, that is lined with foil but patterned paper on the outside. They are awesome. Seriously amazing. They don't peel apart in the oven, I am in love. YEAH!!!!

Boys will be Boys...


...and they are not gonna let the girls run the show any more. In recent days I have come across several cupcakeries that are owned and operated by men. They claim to be taking a masculine approach to a traditionally feminine food. We here in the land of the IronCupcake have been twisting the usual for several years now.


While I ABSOLUTELY appreciate what shops like Butch Bakery and Big Man Bakes, and Toronto's For the Love of Cake's Man Cakes are doing, these guys are certainly not the first to toughen up the traditional pink and fluffy cupcake.
Of course, nobody's seriously suggesting baked goods are gendered. But by riffing on sexual stereotypes, business owners have uncovered a rich new market for cupcakes with cojones.
While I CERTAINLY welcome the rougher gender to the cupcake playground; rather than tagging these alternative cupcakes as masculine, I suggest we simply call them creative. Men and women in Milwaukee, Chicago and all over the land of the IronCupcake and more that have been spinning the norm for a while now. Welcome to the party, gentlmen!

They're the Bomb(ers).com!


In Milwaukee, the land of beer, cheese, Harleys and cupcakes; we are also a land of loyal social media geeks. When one of us wins, we all win and this is a perfect example. Our very good friends, Joe and Angie Sorge of AJBombers (and Water Buffalo, Swig, Sullivans & soon to be Smoke Shack) were featured in the print AND online versions of the Wall Street Journal in an article about using social media to bring your customers to you. SUCH MASSIVE CONGRATULATIONS are in order; not to mention... stating the obvious, I am honored to call them my friends as well!

On a side note, congrats also go to MacDaddy for a PHOTO CREDIT in the Wall Street Journal as well!

SPECIAL REQUEST: Melissa's Bacon, Berries and Balsamic, Oh My!

A few of you have been woo'd by the idea of Melissa's Bacon, Berries and Balsamic, Oh My! cupcake from last weeks IronCupcake BACON challenge. Luckily for all of us, she has agreed to send us the recipe to tempt us even more. Enjoy!

Strawberry Balsamic Sauce
1 1/2 lbs frozen strawberries
3/4 c sugar
1/3 c balsamic vinegar

In a sauce pan, combine the strawberries and sugar. Let macerate for a minimum of 20 minutes, I like to let mine sit for an hour while I have my coffee.

Add in the vinegar, and cook over medium heat for 20-25 minutes until the mixture thickens. Cool and blend until smooth.


For the cake:
I like to use Pioneer Woman's recipe for yellow cake. You can just as easily use a white or yellow box mix or your favorite white cake recipe and just substitute the strawberry syrup for the water or milk. This recipe's cooking time is for 12+ full size cupcakes, if you want mini's, cut the cooking time in half.

  • 2 cups Cake Flour
  • 2 teaspoons Baking Powder
  • ¾ teaspoons Salt
  • ½ cups Unsalted Butter, Softened
  • 1 cup Sugar
  • 3 whole Eggs Room Temperature
  • 2 teaspoons Vanilla
  • ¾ cups (plus A Tad More) strawberry syrup

Preheat oven to 350 degrees.

Sift together flour, baking powder, and salt.

With an electric mixer, mix butter and sugar on high speed until fluffy. Scrape sides of bowl and mix for a few more seconds. Add eggs, one at a time, mixing well after each addition. Add vanilla. Mix to combine.

Alternate adding dry ingredients and milk in three batches, mixing for a few seconds after each addition. Scrape sides of bowl, then mix one final time.

Fill paper-lined muffin tins 3/4 full with batter. Bake for 20 to 22 minutes

Cream Cheese Frosting

16 oz cream cheese, softened

1 stick butter softened

1 tsp vanilla

1 1/2 c powdered sugar

Mix the cream cheese and butter together, add the vanilla and the sugar in 1/2 cup increments, after each addition is fully mixed.

You will also need 6 slices of applewood smoked bacon, cooked. The thick sliced is not the best for the cupcakes, although great for breakfast!


To assemble the cupcakes.
Use a pastry brush to paint the top of the cupcakes with the leftover strawberry syrup, this is the glue for the bacon. Take a half of a slice of applewood smoked bacon (Nueske's is amazing!) and adhere it to syrup. Then frost with the cream cheese icing.

And that's it! These do need to be refrigerated if there are any leftover.

A Birthday Like No Other

For my birthday this year, I wasn’t going to do anything major. After all, I just spent nearly a week in New York. That was present enough. My plans were to just do dinner with a couple of close friends, and even that ended up getting postponed. So, you can imagine my shock this past Monday when the crowd at IronCupcake snuck up on me with the ultimate birthday surprise.



Two of our faithful IronCupcakers, Erin and Danielle, took it upon themselves to throw me a little surprise. Boy did they do a good job. They called a bunch of the businesses that have been on the IronCupcake playground and got presents...yes PRESENTS, for me! I have spent the better part of the past 2 years gather goodies for everyone and everything to make IronCupcake awesome. And they turned around and did it for me. I was so touched. Really ladies...thank you.


Amongst the loot were teas and a tea pot from our friends at RISHI TEA; Raspberry Framboise and Double Chocolate Stout complements of BLATZ LIQUOR; a gift card from the gang at AJ BOMBERS; decadent candy bars from INDULGENCE CHOCOLATIERS, a book by Gilda Radner complements of the gals over at GILDA’S CLUB; plus goodies from a few of my long time bakers as well! If I have forgotten any goodies, I will add them as I find them, my trunk is STUFFED with stuff left over from that night still. (ha ha ha)

But that is NOT where the treats ended. They called my buddy Michelle down at Chicago’s Bleeding Heart Bakery and their ENTIRE STAFF came up for the challenge garnering a bagful of shirts just for me and...the piece de resistance...the MOST FAN-FREAKIN-TASTIC birthday cake...EVER.

Jim, my photo angel - my mac daddy, managed to capture my facial expressions perfectly as this work of art was revealed.

The cake was a 9 layer monster of a chocolate cake with every filling they use at the bakery. I had talked to Vinny, Michelle’s hubs, earlier in the day and he was laughing at the green cake dye on his hands...come to find out it came from my cake. LOL. The giant cupcake had to have weighed 50 pounds, it was perched on a motor that made it rotate and sprinkled all over the top were bits of past challenges: sushi, beer, chili peppers and bacon. Like that would not have been enough on it’s own, there was a sugar likeness of ME, complete with my black mary jane shoes. It was fantastic. Just awesome.

We barely put a dent in the cake that night and I took the leftovers to work the next day. I didn’t get a photo, but what was left after the co-workers/vulchers got to it looked like the emptied carcass of what was once a cupcake. Kind of like those inflatable yard Santa the day after xmas when someone turned the air off.

Now, Milwaukee, not to be outdone by the massive talent from down south, took its own stab at a Sugar Sandy. Erin, our incredibly talented IronCupcaker who has been responsible for some amazing sugar art in the past including the Simpsons, an office, Twilight tower and more ALSO made a sugar Sandy. This one set atop a throne of cupcakes with a robe, sceptor and crown. So cute, I am so honored.

Seriously, HOW DID WE GET HERE? When did IronCupcake transform from a couple of buds smack talking to this citywide phenomenom? I am so lucky. Thank you all, and special thanks to Danielle, Erin and the Bleeding Heart Gang for making this a birthday I will never forget.
